For those of you who think cooking is too much work, give this recipe a try. This tasty and healthy dinner for two took less than 5 minutes to prepare, and 15 minutes to cook! I modified recipes from food.com. The trick is that both the Salmon and the Broccoli can cook on the same baking sheet (I put them on two different sides) at 450 degrees.
Oven-baked Salmon
Ingredients:
- Salmon Filet cut into whatever size pieces you like to eat. 🙂 (I used skinless 6 oz piece cut into two portions)
- Olive Oil
- Salt and Pepper
- Lemon
Directions:
- Preheat oven to 450 F
- drizzle salmon with a little olive oil and sprinkle with salt and pepper on both sides.
- squeeze the juice of 1/2 lemon over the fillet.
- Place on a nonstick baking sheet.
- Bake until cooked through 12-15 minutes
- Serve with lemon wedge.
Roasted Parmesan Broccoli
Ingredients:
- 2 Broccoli crowns (or more if you like)
- 1-2 garlic clove, sliced
- breadcrumbs
- grated parmesan
Directions:
- Preheat oven to 450 F
- Blanched chopped broccoli (use florets, discard thick stem) in boiling water with salt and sliced garlic for 1 minute; drain
- Toss with a splash of olive oil, a handful each of breadcrumbs and parmesan
- sprinkle with salt and pepper
- Place on baking sheet and top with more cheese and breadcrumbs
- Roast 12-15 minutes until done to your liking. 🙂
